In this hands-on class, you’ll learn to create a stunning selection of traditional dishes that showcase the heart and soul of Moroccan home cooking.

We begin with Harira, Morocco’s beloved spiced soup — rich with tomatoes, warming spices, lentils and fresh herbs. Comforting, nourishing and deeply flavourful, it’s a dish that perfectly sets the tone for the feast to come.

Next, you’ll prepare a beautifully fragrant Chicken or Vegetable Tagine, gently simmered with carefully layered spices to create depth and warmth. You’ll learn how to balance sweetness, acidity and spice — the key to authentic Moroccan cooking.

Alongside your tagine, you’ll make Tfaya — a luxurious topping of slow-cooked caramelised onions with raisins and warming spices, adding that signature sweet-savoury contrast that makes Moroccan food so distinctive.

To serve, you’ll prepare Spiced Cous Cous, light and fluffy with delicate seasoning — the perfect accompaniment for soaking up all those rich, aromatic tagine juices. You’ll learn how to handle cous cous properly to achieve beautifully separated grains every time.

To finish, we turn to something indulgently comforting: Moroccan Rice Pudding, delicately scented and creamy, bringing the meal together with subtle sweetness and spice.

Throughout the class, our chef will guide you through essential techniques, spice combinations and flavour building — giving you the confidence to recreate these dishes at home.

    Frequently Asked Questions

    Whats the difference between an individual ticket and a shared ticket?

    An individual ticket is for anyone who wants an individual cooking station with their own set of ingredients, not to be shared with anyone else.T

    The shared ticket allows you to bring a friend or family member, you would share the cooking station as well as sharing the ingredients to create the dishes together. The ticket is priced only slightly more than an individual ticket, meaning you both  get to experience the cooking class together without the need to buy two tickets.

    If you are wanting to get the full experience and have your own individual dishes to taste and take home then we would recommend the individual ticket.

    Where are classes?

    Classes are held at The Cookery School at Cooks Boutique, in Letchworth Garden City.

    What if I have a special dietary requirement?

    We make every possible effort to satisfy dietary needs and, where possible, provide alternatives.If you have any questions about what we can provide, please call us before making your booking on 01708691322.If you have any dietary needs or allergies, even if you don't believe they're relevant, please write them in the "dietary requirements" box at the checkout!

    Will I have my own work station?

    Yes, each student will have a personal work station with an induction hob and a next gen oven plus all the utensils, knives and pans you will need for the class.

    What age range do you allow in classes?

    Anyone of any age is welcome to attend. Under 16-year-olds are welcome to attend our class accompanied by an adult (we would only charge for one ticket). Under 10-year-olds will have classes available to attend especially made for younger children.

    Will I get the recipes?

    At the beginning of your class you will receive a printed card that features all the recipes you will be learning on the day, plus an additional section for any further notes.

    Can I change my booking?

    You may transfer to an alternative class if you give us notice not less than 5 days before the date of the class. In this case, we will rebook you on to your selected class as long as it’s available and not sold out. Confirmed bookings are not eligible for refunds or cancellations under any circumstances. If you cannot attend a class you may send someone else in your place, just let us know the name of the attendee in advance of the class, where possible.

    What hobs do You use in the School

    We use inductions hobs in our school, this can affect pacemakers so please check with us before booking.
